Interviewing as a PE-Licensed Mid-Level Engineer: Bridging Employer Expectations vs Competencies

What should a mid-level engineer with a Professional Engineering license expect in a job interview, in terms of what the company may expect from them and their license, and how can they prepare to effectively communicate their qualifications and readiness to meet those expectations?

I imagine there are cases where a hiring manager is essentially just looking for "someone with a PE" and may not understand that just because a person works in a given field, such as water resources, and has their PE, they may not be ethically qualified to sign off on design work. For example, consider the case where someone is needed to support a new sewer design but their previous experience was only in the modeling of sewer systems and not explicitly in the design realm, and they had never worked under a licensed PE in that area of work.

Hiring manager aside, I imagine there are even cases where other engineers at the company may expect the same thing from you, simply because it is what they need.

Does anyone have any experience to share or anecdotes on this topic?
